Orange & Lemon Shortbread Cookies
Ingredients for Orange & Lemon Shortbread Cookies:
400 g Flour
250 g softened Butter
2 tbsp. Powdered Sugar
Zest of 1 organic Lemon
Zest of 1 organic Orange
1 tbsp. Baking Powder
2 Egg Yolks
1, 1/2 tbsp. Orange Juice
Orange Jam
Method: Orange & Lemon Shortbread Cookies
Mix flour, baking powder, powdered sugar, orange and lemon peel. Add softened butter. Rub these ingredients between the palms and stir the mixture well. Then add two egg yolks and orange juice. If necessary, add a little flour – the dough should not be too sticky.
Roll out the dough to a thickness of about 5 mm. Cut out the bottom half of the cookies using a flower-shaped cookie cutter. Then cut out the second half of the cookies using a flower-shaped double cookie cutter (with a motif in the middle).
You can also use a double cookie cutter of any other shape. If you don't have any double cookie cutter, use a mini cookie cutter for cutting a small motif into the center of tops.
Place the cookies onto a baking sheet lined with baking paper and bake at 180 °C for about 10-12 minutes. Then transfer the cookies to a cooling rack and allow them to cool.
Spread a little jam in the center of a cookie, then top with second cookie. Enjoy!
