Chocolate Courgette Cake

In late summer, when all the vegetables and fruits in the garden ripen at the same time, we often wonder what to do with them. Of course, there are many options. You can cook a jam, freeze them or prepare homemade fermented vegetables that are also very healthy. Since I write a blog about baking, I tried a great recipe for a courgette cake with chocolate. Vegetables are often used in baking, such as carrots or pumpkin. I tried courgette cake for the first time. It was a great surprise. The courgette provides a wonderful lightness of the cake. Also, the combination with chocolate is extraordinary. I recommend using chocolate with a cocoa content of at least 70 %. I used the Nestlé Noir Absolut, that was recommended to me. The chocolate is delicious, and it has an advantage of low sugar content. You can, of course, use a different chocolate.

 

 

I used a Gugelhupf cake pan that you can find on our website. You can of course use another pan, for example a square one with 20 cm diameter. 

 

The preparation is quite simple.

 

 

 

Ingredients for a courgette chocolate cake:

 

 

200 g dark chocolate - at least 70 % cocoa content

 

200 g courgette

 

3 eggs

 

80 g sugar (white or cane sugar)

 

80 g flour

 

1/2 packet baking powder

 

 

 

Method:

 

 

Melt 200 g chocolate in a water bath. Finely grate 200 g of zucchini. In a bowl, beat 3 eggs with 80 g sugar and add 80 g flour. Stir in the chocolate and add the zucchini.

Pour the dough into a greased and floured baking pan and bake in a preheated oven at 180 °C for about 30 - 35 minutes. 

Sprinkle the baked and cooled cake with a little powdered sugar.

 

Enjoy the cake to the fullest.
