Coffee Shortbread Biscuits

 

 

 

 

 

 

 

Ingredients:

 

For Biscuits:

150 g Butter

150 g Flour

30 g grounded Nuts

70 g Powdered Sugar

1 tsp. grounded Coffee

2 tbsp. unsweetened Cocoa

Vanilla Extract

For Cream:

125 g Butter

100 g Powdered Sugar

3 tbsp. Espresso (Coffee)

1 tbsp. Rum (optional)

Vanilla Extract

 

Method:

 

Biscuits:

Stir all dough-ingredients together and form the dough into a ball. Let the dough rest in the fridge. Roll out the dough (about 3 mm thickness) and cut out your cookies, using a circle-shaped cookie cutter. Bake the cookies few minutes
at 170 °C.

 

Cream:

Beat softened butter and powdered sugar until fluffy, then add three tablespoons cooled Espresso, one spoon rum and vanilla extract. Spread half the cookies with the cream each, then sandwich with the rest of the cookies.

 

Tip: Is your cream lumpy? Heat it up a bit and whisk it once again. Your cream is fixed!
