What is the right recipe for Bredele with jam? That is the question I am asked often, not only in Alsace but also in the rest of France. Alsatian Bredele are indeed very successful during Christmas time, together with the Christmas markets and Christmas baking they create the right Christmas atmosphere. The colder season is actually perfect for baking a pie or trying out new original recipes from the comfort of your own home. Bredele with Jam – Ingredients:
210 g Flour
70 g Icing Sugar
1 Packet of Vanilla Sugar
140 g Butter
2 Egg Yolks
Jam of Your Choice (without pieces of fruit)
Bake your Bredele with Jam very simply!
Sift together flour, icing sugar and vanilla sugar. Add butter, egg yolks and mix thoroughly. Form the dough into a ball and let it rest in the fridge for an hour.
Preheat the oven to 180 °C. Roll out the dough to a thickness of about 3-4 mm and cut out the bottom halves of the cookies with a star-shaped cookie cutter. Using a smaller star-shaped Linzer cookie cutter (double star), cut out the upper half of the cookies. Bake your cookies for about 6-10 minutes until they are golden brown and then allow them to cool.
Spread a thin layer of jam on the bottom halves of the cookies. Dust the tops of the cookies with icing sugar and place them gently on each bottom.
