Almond Hazelnut Pistachio Cookies

 

 

 

 

 

 

 

Ingredients:

 

125 g Caster Sugar

2 Eggs

125 g Softened Butter

250 g Flour

1/2 tsp. Baking Powder

80 g Praline (roasted and crushed hazelnuts and almonds)

60 g Crushed Pistachios (optional)

 

Method:

 

Beat eggs and sugar until mixture has thickened and turned white (pale yellow). Add flour, baking powder and softened butter and mix it all properly with your fingers. Mix the praline with crushed pistachios and pour 100 g of this mixture to the dough. Set the rest of the mixture aside and use it for decorating the cookies later. Let the mixture rest in a cool place for about an hour.

 

Roll out the dough to a thickness of about 5 mm thick and cut out the cookies with a cookie cutter. Then place the cookies on a baking sheet lined with baking paper. Lightly beat an egg and brush the cookies with it. Sprinkle your cookies with the rest of the praline-pistachio mixture and bake them at 180°C for about 10 minutes.
