Linzer Cookies: Old Austrian Recipe
Ingredients:
300 g flour
150 g tempered butter
100 g powdered sugar
1 teaspoon baking powder
1 cooked egg yolk
1 egg
1/2 vanilla pod
Method:
Mix the flour, baking powder, and sugar.
Add the egg, egg yolk cut into small pieces, butter and the seeds of the vanilla pod.
Work the dough until you obtain a homogeneous mixture. Wrap it in a plastic film and leave it for 2 hours in the refrigerator.
Roll out the dough to 3 mm and cut out the shapes with cookie cutters. Remember to cut out the middle part in half of the cookies by using a mini cookie cutter.
Place the Linzer on a baking paper. Bake at 165 °C for about 12-15 minutes. After baking, place the cookies on a rack to cool down. Fill the Linzer cookies with jam.
