Ingredients:

  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. In a large bowl, beat together the softened butter and brown sugar until creamy. 
     
  2. Add the maple syrup, egg, and vanilla extract to the butter-sugar mixture. Beat until well incorporated.
     
  3. In a separate bowl, combine the flour, baking powder, and salt.
     
  4. Gradually add the flour mixture to the butter mixture, stirring until the dough is smooth.
     
  5. Divide the dough in half and wrap each half in cling film. Refrigerate for at least 30 minutes.
     
  6. Preheat your oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
     
  7. On a lightly floured surface, roll out one half of the dough to a thickness of about 0.6 cm. Use cookie cutters to cut out shapes from the dough.
     
  8. Arrange the cut-out shapes on the prepared baking sheet, spacing them about 2 cm apart.
     
  9. Repeat with the other half of the dough.
     
  10. Place the cookies in the preheated oven and bake for 8 to 10 minutes, or until lightly golden around the edges.
     
  11. Remove from the oven and cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
