Spiced Cat's Tongues









250 g Sugar

50 g Butter

165 g Pine Honey

2 Eggs

1/2 tsp. Cinnamon

1 tsp. Ground Cloves

1/2 tsp. Bicarbonate of Soda (Natron)

580 g Flour

1/2 Packet of Baking Powder

60 g chopped Walnuts

A dash of cherry brandy

Alternativ: Finely chopped orange and lemon peel


2 Egg White

300 g Icing Sugar




One day before baking

Melt the honey, sugar, and butter together in a large saucepan and then leave to cool. Stir in the eggs, cinnamon, ground cloves, and bicarbonate of soda (dissolve in cold water beforehand), then add in the flour, baking powder, ground walnuts, and cherry brandy. Shape the dough into a ball, wrap it in cling film and leave to rest in a cool place for a night et least of longer.


The next day

Before doing anything further, leave the dough to stand at room temperature for at least 1 hour. Preheat the oven to 180°C. Roll out the dough on a flour-covered surface until it is 2-3 mm thick then cut out the biscuits using a cutter. Bake for 10-12 minutes. After baking, the Lebkuchen biscuits will feel a little soft (they will harden once cooled to room temperature). Once the biscuits are cool, cover with icing and leave to dry.
