Soft Italian Lemon Biscuits – Biscotti morbidi al limone

The delicious taste of lemons... You can enjoy these biscuits at any season of the year – in summer with lemonade and in winter with a delicious lemon tea.

 

Ingredients

 

Lemon Biscuits:

 

100 g softened Butter

1 Egg

Juice and Zest of one organic Lemon

120 g Sugar

100 g Flour

½ Packet of Baking Powder

 

Sugar for rolling biscuit dough in before baking:

 

Granulated sugar and powdered sugar in two separate bowls

 

 

Method: Lemon Biscuits

 

In a bowl, whisk together butter and egg (it is easier with a food processor). Then add lemon juice and zest. Allow sugar to trickle in gradually and mix everything together once again. Add the remaining dry ingredients – flour and baking powder. Then knead everything into a smooth dough. Leave the dough to rest in the fridge for about 30 minutes.

 

Preheat the oven to 180 °C. Prepare two bowls, pour granulated sugar into the first one and powdered sugar into the second one. Then, using a teaspoon and your hands, shape the dough into small balls (about 4.0 cm or less in diameter). First, roll the prepared balls in the granulated sugar, then in the powdered sugar. Place the lemon biscuits onto prepared baking sheet, spacing far apart. Put them in the fridge for 15 minutes. 

 

Bake the biscuits at 180 °C for about 15 minutes until just barely golden (the exact baking time depends on the oven). Your lemon biscuits will rise and crackle nicely during the baking process.
