Shortcrust pastry Biscuits with Parmesan, piment d'Espelette and Coriander

 

A BBQ party with family or friends is always a good idea. With these savoury shortcrust pastry biscuits, your BBQ party will be a huge success! Last but not least, this dough can be used for quiche as well!

 

 Ingredients:

(for approximately 40 pieces)

 

150 g Butter

220 g Flour

80 g grated Parmesan Cheese

Salt

½ tsp. Piment d'Espelette (Espelette pepper)

A handful of chopped Coriander

2-3 tbsp. Water

 

Method: 

 

In a bowl, mix together flour, parmesan cheese, piment d'Espelette, coriander and salt. Cut in butter and stir until it becomes a powdery mixture. Gradually add water and mix all the ingredients thoroughly until a dough forms. Shape the dough into a ball and let it rest in the fridge for half an hour. 

 

Using a rooster-shaped biscuit cutter, cut out the biscuits and bake for about 8 minutes at
180 °C until golden brown.

  • The amount of salt you add to the dough is depending on your desired taste. Be careful, though, as the Parmesan cheese may already be salty. However, the amount of water should be exact.
  • This dough can be also used for quiche. 
  • If you want to serve those biscuits to children, replace the chilli with a milder ingredient such as cumin or basil.
