We are constantly searching for a perfect recipe. However, the best recipes are the ones we have inherited from our family. Not only because they are tried but also because they evoke fond memories in us. So today I'm sharing a recipe with you that I got from my mum. Enjoy!
50 g Butter
50 g Powdered Sugar
120 g grated Coconut
1 Egg White
300 g Flour
70 g Powdered Sugar
150 g Butter
¼ Sachet of Baking Powder
Cream the butter with the powdered sugar. Then add an egg white and grated coconut.
Mix all the ingredients together, form the dough into a ball and let it rest in the fridge for an hour.
Roll out the dough thinly and cut out the coconut cookies with a circle-shaped cookie cutter.
Arrange the cut-out cookies on a baking sheet lined with baking paper. Brush all the cookies with egg yolk and then using a spoon top with a little coconut mixture. Bake your coconut cookies at 170°C for about 15 minutes until golden brown.
