Little Rascals










120 g Sugar

1 Pinch of Salt

1 Egg

220 g Flour

25 g ground Almonds 

125 g softed Butter

1 tsp. Cinnamon

1 Packet of Vanilla Sugar


150 g Red Fruit Jam (any red fruit)

 50 g Icing Sugar




Whisk together egg, sugar, vanilla sugar and salt until creamy. Stir in flour and then using your fingertips rub together until the mixture forms a batter. Add in butter piece by piece and knead everything together to form a smooth dough. Shape the dough into a ball, cover in cling film and leave to rest for 1 hour in a cool place. Preheat the oven to 150 °C. Roll out the dough and cut out the biscuits using our cutter. Cut out the centers of half of the pieces with a thimble or apple cores for the lids. Place all the pieces on baking paper. Bake for 10-15 Minutes. Then, place a nut-sized mound of jam in the middle of the whole biscuits and cover with the cut out lids. Dust the „Little Rascals" with icing sugar.
