125 g creamed Butter
120 g Powdered Sugar
2 Egg Yolks
280 g Flour
Powdered Sugar and Lemon juice for Sugar Icing
Cream Butter and Sugar together. Add egg yolks. Zest 2 lemons finely and then extract the juice from them. Add lemon zest and lemon juice to the mixture. Add flour. Knead the dough by hand until you get a soft and a bit sticky dough (add more flour if necessary). Shape the dough into a ball, wrap it in a foil and let it rest in the fridge for 1 hour.
Roll out the dough (about 5 mm thickness) and cut out your cookies using a star-shaped cookie cutter. Arrange the cookies on a baking sheet lined with baking paper and bake them until golden (at 180 °C) for about 10-15 minutes. (The exact baking time depends on the thickness of the dough. Check on your cookies while their bake.) Take the cookies out of the oven and let them cool.
Sugar Icing: Stir powdered sugar and lemon juice until it has a smooth and thick consistence. Spread sugar icing all over each cookie. You can use lemon zest for decorating.
