Lemon Almond Cookies

 

 

 

 

 

 

 

Ingredients:

 

125 g softened Butter

125 g Powdered Sugar

Zest of 1 Lemon

1 Egg

125 g Potato Starch

150 g Flour (all purpose)

½ tsp. Baking Powder

150 g ground Almonds

Glaze (optional):

300 g Powdered Sugar

4-5 tbsp. Lemon Juice

150 g Walnuts

 

Method:

 

Mix all the ingredients and shape the dough into rough ball. Let it rest in the fridge for about 30 minutes. 

Preheat the oven to 180 °C.

Roll out the dough to a 0,5 cm thickness and cut out your cookies. These cookies look traditionally like a circle. However, you can have fun and use different types of cookie cutters.

Pprepare the glaze, so that you gradually add the lemon juice to sugar. You need a consistency that won't run off your cookies. After you glaze your cookies, decorate them by using walnuts. Let the cookies rest first. Enjoy!
