You have probably already heard about French Butter Cookies. However, have you ever heard of Dulce de Leche? I have never heard about it before. This sweetened condensed milk is a culinary speciality from South America. According to some sources, it is a traditional recipe. And it is so simple! As my friend puts it: „I put a can of condensed milk in the water, go to the beach and when I come back home, my dessert is ready to serve.”
Ingredients for French Butter Cookies:
180 g Flour
32 g Almond Flour
3 g Baking Powder
1 g Salt
66 g Powdered Sugar
100 g cold Butter
32 g Egg Yolks
Ingredients for Dulce de Leche:
1 Can of sweetened Condensed Milk
Method: French Butter Cookies
Mix all the dry ingredients together and sift. Cut cold butter into the mixture. Rub these ingredients between your palms until sandy. Add egg yolks. Mix all the ingredients together until dough is formed. Be careful and do not over-knead the dough! Allow the dough to rest in a cool place for at least 1 hour.
Roll out the dough between two sheets of parchment paper. Using a circle shaped cookie cutter (I used the crinkled circle), cut out your cookies. Place the cookies onto a baking sheet lined with baking paper and let them rest in a cool place for at least two hours. Preheat the oven to 160 °C. Bake for about 6-12 minutes (depending on the oven) until golden brown. Let the cookies cool after removing them from the oven.
Put the dough in a piping bag (use a round piping tin). Spread half the cookies with cream (whilst piping a continuous spiral – see the picture below) and sandwich with remaining cookies. Let it rest at room temperature for a while.
These cookies should be eaten in a short time.
Method: Dulce de Leche
Remove label from the can of condensed milk and place the can on its side in a large pot. Fill the pot with water so that the can is completely covered with water. Set the pot over high heat and allow to come to a simmer. Reduce heat and cook the can for about 3-4 hours. Check the pot regularly to ensure the water level stays above the can. Add more water, if necessary.
Remove the can from the water and allow to cool before opening. Do not open the can while still hot!
Cooled Dulce de Leche can be stored in the fridge for up to 1 month.
Spread it over cookies, pancakes etc. Enjoy!
