Easter Shortbread

Have fun decorating your cookies – for example with Smarties. :) Thanks to the baked egg yolk, the dough is easy to knead and the cookies are incredibly soft too. You can use this recipe all year round. At Christmas time, use our Christmas cookie-cutters. Enjoy baking with your kids with this easy recipe!





2 Eggs

150 g Flour

140 g softened Butter

60 g Icing Sugar

25 g Almond Powder

1 Pinch of Baking Powder

1 Pinch of Salt




Bring a pot of water to boil. Once the water's boiling, gently lower the eggs into the water. Boil for 10 minutes. 


Let the hard-boiled eggs cool, peel and strain the egg yolks (without egg whites, egg whites stay unused) through a small fine strainer.


In a bowl, mix flour, softened butter, icing sugar, powdered almonds, yeast and salt together. Rub these ingredients between the palms until sandy. Stir in the hard-boiled egg yolks. Form the dough into a ball and let it rest in the fridge for 30 minutes. 


Roll out the dough to a thickness of about 6 mm. Using a cookie cutter, cut out your desired shapes. We used a rabbit-shaped cookie cutter. Preheat the oven to 180 °C.  Place the cookies on a baking sheet lined with baking paper and bake them for 15 minutes. Let them cool down.


Enjoy your cookies immediately or store them in an airtight container. Of course, you can use this recipe all year round. For Christmas, use our Christmas-themed biscuit cookie cutters.
