Cupcakes (not only) for Grandma :-)

This recipe is so simple that even children can make it on their own. Children at around the age of 11/12 can bake these cupcakes by themselves. Adults can of course help with baking too. Your children will surely be proud of themselves when they prepare such a tasty gift for their grandmother.

Ingredients for the batter:

2 Eggs

60 g Caster Sugar

1 Natural Yoghurt

1 Packet of Vanilla Sugar

100 g Flour

50 g softened Butter

½ Packet of Baking Powder

1 tbsp. Cocoa Powder (optional)

Bake the most delicious cupcakes:

Preheat the oven to 180 °C. Melt butter and let it cool down before you use it. In a bowl, beat two eggs and mix with powdered sugar and vanilla sugar. Then stir until a white fluffy mixture is obtained. First, add flour and baking powder. Then add the prepared melted butter and yoghurt. Mix all the ingredients together until a smooth homogeneous batter is formed.

Do you prefer to snack on chocolate-flavoured cupcakes? Just add two tablespoons of cocoa powder to the batter. The second option: Divide the batter in half and mix one half with cocoa.

Fill your cupcake cases (¾ full) with the batter and place them in the oven.

Do you want to test your cupcakes for doneness? Just use a wooden stick (or a toothpick) and insert it into the centre of your cupcake. Pull it out. When the wooden stick comes out clean, your cupcakes should be done.

Ingredients for the Cream:

170 g Mascarpone

45 g Powdered Sugar

1-2 Drops of Strawberry or Orange Flavour

2-3 Drops of Food Colouring (pink, orange or any other colour of your choice)

If you are using liquid or powdered food colouring, even a single drop is enough. You can always add more food colouring to make the colour darker and deeper.

Cream – here is how you make it:

Mix mascarpone with powdered sugar, add flavour and food colouring of your choice and mix thoroughly once again. Then fill a piping bag with the cream and place it in the fridge.

Decorate your cupcakes!

Once your cupcakes are baked and cooled, decorate them with the prepared cream. Start at the outer edge of the cupcake and slowly pipe inwards. Then finish in the middle with a little peak. Using a piping bag, you can also create beautiful flowers very easily.
