Autumn Cookies with Peanut Flour

As the days grow shorter and the air turns crisp, there is nothing more comforting than baking homemade cookies. With just a handful of flour, the warmth of the oven and the aroma of melting butter, let us create together some autumn treats, perfect to enjoy with a steaming cup of tea or hot chocolate. These peanut flour cookies have a subtle nutty flavour and a golden texture. They are also perfect for decorating with an engraved rolling pin or a cookie stamp, leaving charming patterns that hold beautifully during baking.


Ingredients (for about 25 cookies, depending on size)

  • 150 g peanut flour

  • 140 g white spelt flour

  • 100 g icing sugar

  • 1 egg

  • 90 g butter


Method

  1. Beat the softened butter with the egg and icing sugar until smooth and creamy.

  2. Gradually work in the peanut flour and spelt flour.

  3. Shape the dough into a ball, wrap in cling film and chill in the fridge for at least one hour (or overnight).

  4. Take out the dough, knead lightly with your hands to soften, then roll out to about 5 mm thick.

  5. Cut shapes with cookie cutters or use an engraved rolling pin or cookie stamp to imprint a design that will remain after baking.

  6. Place the cookies on a baking tray lined with parchment paper and bake at 180 °C for about 10 minutes, until lightly golden.
